Arca
Mexico

Arca's dining space opens to the jungle along Tulum's coastal road, placing trees, fire and the evening air around the table. Chef and co-owner José Luis Hinostroza leads a kitchen rooted in Mexican ingredients and techniques, with menus shaped by the produce of the Yucatán Peninsula. Wood, charcoal and fermentation give the food much of its character. A smoked pumpkin-seed dip comes with crisp heirloom-corn tostadas, while grilled mushroom tlayuda brings together huitlacoche mole and mushroom chicharrón. Roasted squash uses the fruit, flowers, leaves and seeds of the same plant. Small plates are designed for sharing, and a tasting menu offers a longer sequence. Seafood, game and meat appear alongside vegetable dishes, with combinations such as soft-shell crab in amaranth and mezcal tempura showing the kitchen's interest in contrasting textures and vivid sauces. The bar follows the surrounding plant world through cocktails grouped around seeds, leaves, flowers and fruit. Ingredients including sour orange, hoja santa and mamey extend the food's sense of place. Arca suits an evening centred on adventurous cooking, shared dishes and carefully considered drinks.
