Assyl

Assyl celebrates Moroccan cooking in one of Selman Marrakech’s most theatrical rooms. High ceilings, painted woodwork, chandeliers and Ottoman-inspired decoration create a rich setting for a menu rooted in the knowledge passed down through generations of dadas, Morocco’s traditional family cooks. An all-female kitchen team prepares dishes such as beef-shank tanjia, poultry tagine with preserved lemon and olives, and sea bream with chermoula and seasonal vegetables. Mushroom and spinach pastilla offers another route through the menu, while milk pastilla brings a traditional finish. Lute and oud music contribute to the atmosphere, connecting the evening’s sense of ceremony with the hotel’s wider celebration of Moroccan craft and culture.
