Bacchus occupies Cudahy Tower in downtown Milwaukee, with a contemporary dining room and a glass-enclosed conservatory among its private-event spaces. Chef Brent Davis leads a kitchen focused on seasonal ingredients, while an extensive wine list supports both shorter meals and tasting-menu dinners. Diners can choose à la carte, a three-course selection or a six-course chef’s menu, with a dedicated vegetarian menu also available. Recent dishes include duck dumplings in consommé, hand-made tagliatelle with Berkshire pork Bolognese and halibut with trout-roe beurre blanc. Wisconsin cheeses receive their own section, representing producers such as Uplands, Hook’s and Carr Valley. Optional sommelier pairings accompany the tasting menu.
