Boreal explores Finnish ingredients through a contemporary tasting-menu format, drawing on seasonal produce, foraging and preservation. Pasha Demin’s cooking uses fermentation to extend and deepen flavours rather than treating it as an end in itself. The Design District setting makes the restaurant a natural part of an evening spent in the surrounding neighbourhood.
