Brasserie 1893 - Waldorf Astoria Beijing

Brasserie 1893 is the French restaurant at Waldorf Astoria Beijing, on Jinyu Hutong near Wangfujing. Its name recalls the year the original Waldorf Astoria opened in New York. Two Molteni ranges form the centrepiece of an open show kitchen, allowing diners to watch the chefs at work. The cooking combines brasserie dishes with more elaborate sharing options. Neptune brings together caviar, oysters, Boston lobster and prawns, while Vulcan pairs tenderloin with truffle mashed potatoes and vegetables. Other menu choices include bouillabaisse, cod cake with beurre blanc and a beef-brisket vol-au-vent. Breakfast is served daily, with lunch and dinner offered from Tuesday to Sunday.
