Brazen Open Kitchen + Bar is chef Kevin Scharpf's restaurant in Dubuque's Historic Millwork District. Its open kitchen prepares food from scratch, working with local farmers and growers to build a seasonal menu. Pasta is made by hand in-house, and the kitchen combines traditional and contemporary techniques to bring out the character of fresh ingredients. The same approach carries into the bar. Cocktails use house-made syrups, freshly prepared ingredients and local herbs, often reworking familiar classics. Craft beer and a selected wine list provide alternatives. Dinner is served in the Washington Street restaurant, where the connection between the food, its producers and the people preparing it is central to the experience.
