Celele
Colombia

Celele occupies a little blue house in Cartagena’s Getsemaní neighbourhood, where chef Jaime David Rodríguez Camacho explores the edible biodiversity of Colombia’s Caribbean region. The restaurant grew from Caribe Lab, a research project that documented ingredients, recipes and techniques across the territory before the dining room opened in 2018. Seasonal menus draw on relationships with small farmers, fishermen, gatherers and artisans. Fermentation and preservation help transform fresh regional produce, while collaboration with botanists and educational institutions supports the kitchen’s continuing research. The result is contemporary Caribbean cooking grounded in a specific landscape, with community partnerships shaping what reaches the table as closely as the chef’s own techniques.
