China Blue by Jereme Leung looks across Manila Bay from Conrad Manila, with blue chandeliers giving the dining room its defining colour. Jereme Leung's contemporary interpretation of regional Chinese cooking is executed by executive Chinese chef Eng Yew Khor, combining traditional dishes with precise technique and presentation. Golden roast duck is a signature, its crisp skin providing a centrepiece for a shared meal. Private rooms accommodate smaller gatherings and feature the Huanghou series: six nature-inspired portraits of faceless imperial figures by artist collective Khia Chong. The bay views and commissioned artwork extend the restaurant's character beyond the food, while its location within the hotel makes it accessible to both residents and visiting diners.
