Cochon

Cochon is a New Orleans restaurant on Tchoupitoulas Street, where Louisiana ingredients and a wood-burning oven shape the cooking. The kitchen works with local farmers and fishermen, and the menu changes with their produce and catch. Wood-fired oysters with chilli-garlic butter and Gulf fish cooked fisherman’s style illustrate that approach. Pork and boucherie preparations are central to the selection, from fried boudin and country ham to house-cured meats with pickles and mustard. Chicken-and-andouille gumbo, catfish courtbouillon and rabbit with dumplings extend the Louisiana thread. A three- or four-course Feed Me menu offers the kitchen’s choice of signatures and seasonal dishes.
