Cosme opened in Lima in 2015 with an approach built around comfort food, seasonal ingredients and the flavours of home cooking. Its name honours Cerro San Cosme, while recycled materials in the dining space and a gallinazo bird symbol connect the restaurant with the city's everyday life. The menu ranges widely while retaining a Peruvian foundation. Tiradito combines the catch of the day with avocado and leche de tigre; seared octopus comes with pesto quinoa and black-olive salt. Cosme rice brings together pork belly, roasted peppers, beans, banana and egg. Pasta, ramen and a lúcuma fondant show how international formats sit alongside local produce and familiar memories.
