Crizia
Argentina

Crizia makes Patagonian oysters a defining part of its Buenos Aires menu. Its oyster bar offers them raw with shallot vinegar and lemon, dressed with yuzu and ponzu, fried in tempura or baked Rockefeller-style with spinach and Parmesan cream. Seafood continues beyond the oysters, with king crab and sole tartare, wild prawns and grilled baby squid among the dishes. The menu also gives land-based ingredients attention through wood-roasted sweetbreads with mushrooms and quail egg, and organic artichokes with cured lemon and quinoa. An à la carte menu and a separate tasting menu offer different ways to explore the kitchen.
