CUTS at Rosewood Phnom Penh centres on hand-cut meats, combining a steakhouse grill room with private dining suites and the Wine Vault. Its elevated setting in Vattanac Capital Tower places the restaurant above the city, while the different dining spaces allow for both an individual table and a more private gathering. Tasting, set lunch and à la carte menus offer several ways to approach the kitchen. The wine collection contains more than 3,000 bottles, providing a substantial counterpart to the grill. A separate cooking experience begins in the hotel’s hydroponic garden and explores how local produce and fresh herbs can be used with less waste.
