D.O.M.

D.O.M. is Alex Atala’s restaurant in São Paulo’s Jardins district, built around research into Brazilian ingredients and food culture. Its tasting menu changes annually, exploring how culinary traditions can be preserved while continuing to evolve. The current format follows ten stages, from small opening bites through cold and warm dishes to desserts and petits fours. A contrasting weekday lunch centres on arroz com feijão, the rice-and-beans meal that has been served since the restaurant’s earliest days. It brings rice, two kinds of beans, beiju, farofa, vegetables and breaded banana together with a choice of meat, fish or chicken, followed by dessert and coffee. Wine pairing is available with the tasting menu.
