De Mondion occupies the rooftop terrace of The Xara Palace, a seventeenth-century Baroque palazzo built into Mdina’s bastions. Views stretch across the island, while executive chef Clint Grech gives the menu a Mediterranean and Maltese identity informed by classical French cooking. Seasonal produce, much of it grown in Xara Gardens, guides the kitchen’s changing dishes. The emphasis is on presenting ingredients clearly rather than letting technique obscure them. A wine list of more than 500 references ranges across international regions, with sommeliers helping guests choose bottles to accompany dinner.
