Death & Taxes is Ashley Christensen’s wood-fire-focused restaurant on West Hargett Street in downtown Raleigh. Its name recalls the building’s former uses as a funeral home and bank, while the open kitchen puts the cooking at the centre of the room. Fire shapes more than the steak section. Roasted North Carolina oysters, grilled vegetables, smoked ricotta and embered ingredients show how the technique runs through the menu. Dry-aged steaks and grilled chicken provide larger courses, complemented by fish, pasta and vegetable dishes. Cocktails, beer and wine accompany a style of cooking rooted in Southern ingredients but open to wider influences.
