Demo brings a relaxed manner to an ambitious seasonal kitchen in Helsinki. Founded in 2003, the restaurant moved to Itämerenkatu in 2024, carrying its emphasis on carefully chosen produce and technically inventive cooking into a new setting. Dinner follows the chef’s menu, with combinations that might place grilled mackerel alongside raspberry ponzu, or scallops with fennel sabayon and XO sauce. Finnish touches, including vendace roe and sour-milk bread, sit comfortably beside international ingredients. Lunch offers shorter four- and six-course menus. A cellar of more than 400 European wines supports the food, and the bar welcomes guests who simply want to explore a glass.
