El Chato is Álvaro Clavijo’s contemporary Colombian restaurant in Bogotá, where changing menus follow local produce and the kitchen’s continuing research. Opened in 2017, it builds dishes around relationships with small producers and the country’s varied ingredients, using techniques shaped by the chef’s training in Europe and North America. Diners can choose à la carte or tasting menus, with vegetarian options available. The approach reinterprets Colombian ingredients and culinary memories through a modern kitchen rather than reproducing a fixed collection of regional recipes. El Chato was named number one in Latin America’s 50 Best Restaurants in 2025, recognising the same exploration of local flavours that guides its daily cooking.
