Evolve is the restaurant at Southern Sun Maputo on Avenida da Marginal. Large windows face the ocean, with the dining room moving from a bright daytime setting to softer lighting in the evening. Mediterranean cooking draws on both Mozambican and imported ingredients. Seafood and steak are central to the menu, alongside dishes such as tiger prawns, picanha, Italian pizzas, Maputo-style peri-peri chicken and lamb cutlets. This range combines regional produce and Portuguese-influenced flavours with broader Mediterranean choices. The restaurant forms the hotel’s main evening dining venue, complemented by the separate Deco lounge, terrace and bar.
