Flagstaff House
Colorado

Flagstaff House turns the climb above Boulder into part of the occasion. Set at roughly 6,000 feet on Flagstaff Mountain, the restaurant looks across the city and surrounding foothills, pairing its elevated setting with contemporary American tasting menus. Chef Chris Royster’s kitchen works with Colorado farmers, ranchers and foragers, allowing dishes to change frequently with the available ingredients. The emphasis is on a composed sequence of courses, with seasonal produce and regional sourcing guiding the menu. Wine is equally central to the experience. A cellar holding more than 16,000 bottles gives the team considerable scope for matching a meal, whether diners arrive with a particular region in mind or want guidance through the list.
