Gallery by Chele occupies the fifth floor of Clipp Center in Bonifacio Global City. Chefs Chele Gonzalez and Carlos Villaflor combine Spanish-European experience with Filipino heritage, developing food through travel, local ingredients and the cooking knowledge of farmers, fishers and home cooks. The kitchen uses both local and international techniques, including traditional fermentation, to create dishes rooted in the Philippines. The same work shapes alcoholic and alcohol-free drinks, with local flavours, house ferments and natural beverages available individually or in pairings. Stvdio Lab extends the restaurant's research through a test kitchen and collaborations with universities and institutions studying agriculture, ingredients, food methods and technology.
