Glorietta Trattoria
Wyoming

Glorietta Trattoria is the wood-fired Italian kitchen at Jackson’s Anvil Hotel. Handmade pasta, flame-grilled steaks and seasonal sides shape a menu that follows the farms supplying it. Bread and pasta use heritage wheat from Wyoming Heritage Grains, a local fifth-generation farm that mills its own grain. The wine list focuses on artisan growers and native Italian grapes, including organic and biodynamic producers. Cocktails draw on Italian aperitivo traditions while incorporating alpine ingredients from nearer home. Alongside the main dining room, private dining and customised menus allow the restaurant to host larger gatherings; its pastry kitchen also makes celebration cakes to order.
