Goldfinch Tavern brings Pacific Northwest cooking to Four Seasons Hotel Seattle, with windows overlooking Elliott Bay, the Seattle Great Wheel and the Olympic Mountains. Created with chef Ethan Stowell, the restaurant focuses on regional seafood and local produce, with cedar-plank salmon among its signatures and halibut cioppino among more recent additions. The refreshed dining room uses walnut panelling, ocean-blue tones and warm stone finishes. A wraparound central bar makes cocktails a prominent part of the space, while a marble-clad wine gallery presents wines from Northwest growers. Weekend brunch combines an appetiser and dessert buffet with plated main courses. Private dining rooms offer a more enclosed alternative to the main waterfront dining room.
