Graze

Graze looks across Madison’s Capitol Square towards the Wisconsin State Capitol. Opened by chef Tory Miller in 2010, it serves seasonal comfort food shaped by his Wisconsin and Korean heritage. Its airy dining room provides a setting for dishes made with produce from farms and suppliers across the state and wider Midwest. The menu follows those suppliers’ seasonal availability, giving the kitchen room to change dishes as ingredients arrive. Dinner, weekend brunch and cocktails provide several ways to use the restaurant, from a daytime meal on the square to an evening built around the current selection. Miller also leads neighbouring L’Etoile, linking Graze to his longer work with regional ingredients.
