Guard and Grace gives the Denver steakhouse a broad, contemporary menu under chef Troy Guard. Beef cooked over a live oak fire is the centrepiece, with choices including prime Angus, Wagyu and grass-fed cuts. A fillet flight allows diners to compare three styles side by side. The seafood bar offers oysters from both American coasts, lobster, king crab and composed raw-fish dishes. Starters such as oak-grilled octopus and Wagyu tartare bring Spanish and Asian accents to the meal, while handmade pasta, fish and vegetable dishes widen the possibilities. The dining room is joined by a substantial bar and an outdoor patio. Shared sides, including truffled gnocchi and oak-fired carrots, make it easy to build dinner around the table.
