Gustu explores Bolivia through ingredients grown, raised or gathered within the country. Based in La Paz's Calacoto district, the restaurant works exclusively with Bolivian products, drawing on relationships with small producers, rural communities and Indigenous nations. The range reaches from the Andes and valleys to Amazonian wetlands and rivers. Alongside à la carte dining, the Bolivia Menu and Extended Bolivia Menu offer longer tasting experiences. Their development draws on exploration trips and research by the kitchen and sommeliers, including collaboration with researchers and scientists. This gives unfamiliar native products a place in contemporary cooking while keeping the restaurant's attention on local food knowledge and the people who sustain it.
