Haerlin is the three-Michelin-star restaurant at Fairmont Hotel Vier Jahreszeiten in Hamburg. Chef Christoph Rüffer has led its cooking since 2002, building seasonal menus around regional produce and carefully composed flavours. The restaurant’s setting overlooks the Inner Alster, linking the meal with the hotel’s lakefront position. An extensive wine selection accompanies the menu. For a different perspective, the chef’s table sits within the kitchen, allowing a small group to watch Rüffer and his team at work over an aperitif or dinner.
