Hazara
Mongolia

Hazara has served North Indian frontier cooking in Ulaanbaatar since 1997, with a menu centred on Mughlai traditions. Herbs, restrained spicing, dried fruits and cream are characteristic ingredients, while a clay tandoor is used to grill meat and bake naan. The dining room takes inspiration from the havelis of Rajasthan, using hard teak, carved doors and rich colours to create a warm setting. The kitchen describes its cooks as belonging to a tradition in which recipes and skills pass between generations. Together, the tandoor cooking and the richly detailed interior give Hazara a clearly defined Indian identity within the city's restaurant scene.
