Hinokizaka offers four distinct approaches to Japanese dining on the 45th floor of The Ritz-Carlton, Tokyo. Separate areas focus on kaiseki, sushi, tempura and teppanyaki, allowing diners to choose the style of meal as well as the view across the capital. Seasonality guides the kaiseki courses, while the smaller counters bring the chefs’ work into focus. Teppanyaki gives regional Japanese Wagyu a leading role; sushi and tempura each have their own dedicated setting and menu. The interiors combine Japanese design references with contemporary comfort. Lunch and dinner offer different ways to explore the restaurant, and private dining spaces make it adaptable for a more personal occasion.
