Horn & Cantle brings Montana’s ranching traditions to the table at Lone Mountain Ranch in Big Sky. Its cooking gives regional meat, dairy and vegetables a prominent role, with a menu that ranges from smoked trout dip and elk meatballs to bison short rib and elk-and-porcini ravioli. Generous sharing dishes suit the setting, including wild-game bolognese and a large bone-in ribeye. The kitchen also makes room for fish and vegetable dishes, such as charred aubergine with tahini. The adjoining Western saloon offers a more casual fireside setting. Local whiskey flights and the Big Sky Bramble, made with bourbon and huckleberry, provide a natural way to begin or round off dinner.
