Ibaya at Sport Hotel Hermitage & Spa in Soldeu brings together the culinary direction of Francis Paniego and resident chef Jordi Grau. Its tasting menus explore Andorra's mountain landscape and food traditions through contemporary preparations, drawing on the changing seasons of Soldeu and the Incles Valley. The menu gives space both to ingredients from the surrounding territory and to the techniques and recipes inherited from earlier generations. House-made bread uses flour from the region, while dishes can reinterpret familiar combinations through a more elaborate sequence. Carefully selected wines accompany the meal.
