Dining at Illa Experience Hotel centres on INES, a restaurant within the hotel’s NESTS culinary project in Quito’s Old Town. The project brings young culinary talent together with experienced guidance, developing food around Ecuadorian and wider South American flavours. Juan Carlos and Cristina lead the restaurant’s exploration of flavours and textures. The offering extends to à la carte breakfast, afternoon tea and an outdoor garden dining space. These formats provide different ways to eat within the historic house, from a morning meal to lunch or dinner. The restaurant’s connection with NESTS gives the kitchen a role in developing culinary talent alongside serving guests.
