On the fourth floor of Iniala Valletta, ION Harbour pairs views across the Grand Harbour and Three Cities with Simon Rogan’s ingredient-led cooking. Executive chef Oli Marlow and head chef Christian Cali work with local growers, fishers and foragers, giving the changing menus a close connection to Malta’s seasons. Multi-course tasting menus are served at lunch and dinner, with a shorter lunch option. The drinks programme follows the same approach to resources: alongside wine, cocktails use kitchen surplus such as peels, stalks and stems. The harbour setting and careful sourcing give the meal two distinct points of reference.
