Jack Sprat
Alaska

Jack Sprat began in 2001 at the base of Mount Alyeska in Girdwood, founded by Frans and Jen Weits to bring different dietary preferences to one table. The restaurant occupies a chalet that has expanded over time to include additional rooms, a deck and a beer garden. Its ‘fat and lean’ philosophy accommodates both lighter dishes and more substantial meals. Chef Ryan Gelosa draws on international cuisines while using Alaskan seafood, humanely raised meats and organic or local produce. Foraging in the Chugach National Forest adds another source of ingredients. Pasta-making and sauce work sit alongside the broader menu, giving the kitchen scope to combine familiar techniques with the flavours available in Alaska.
