Jade Mountain Club places dining beside an infinity pool high above Saint Lucia's Caribbean coast. Reserved for resident guests, it forms the culinary centre of Jade Mountain and gives the resort's distinctive architecture an equally considered food programme. Chef Allen Susser's approach draws on the Caribbean and other tropical cultures. Menus change with the seasons and the availability of local ingredients, combining different traditions and techniques under the hotel's description of Jade Cuisine. The result is a meal built around the region's produce rather than a fixed list of signature dishes. Breakfast, lunch and dinner are served here, allowing guests to experience the setting at different points in the day. Live entertainment on selected evenings ranges from jazz to acoustic guitar, adding another dimension to dinner without changing the restaurant's intimate scale. The Celestial Terrace above provides a separate place for sunset cocktails or looking at the night sky. Together, the two spaces make dining an integral part of a stay at Jade Mountain.
