Kado no Mise
Minnesota

Kado no Mise serves Edomae sushi on the second floor of a building in Minneapolis's North Loop. Chef Furukawa brings his Tokyo training to a deliberately restrained Japanese dining experience centred on omakase. The name translates as corner restaurant. Three menu levels, Ume, Take and Matsu, offer different lengths and selections. All three are available in the dining room, while the counter serves Take and Matsu. Seasonal courses can include savoury custard, carefully prepared vegetables and seafood before successive nigiri, rolled sushi, miso soup and homemade sorbet. The fish-centred menus cannot accommodate vegetarian, vegan or fish-free diets.
