Knystaforsen occupies an old sawmill beside a river in Rydöbruk, surrounded by forest. Eva and Nicolai Tram's restaurant was once their home, and its tasting menu draws closely on the landscape outside. Fish and other ingredients come from lakes and rivers, woodland produce is foraged, and local suppliers provide wild game and artisanal foods. Cooking takes place outdoors over flames and embers, making fire central to the preparation of the meal. Beverage pairings accompany the courses, while a small number of rooms allow guests to remain overnight. The restaurant's setting and methods keep the surrounding forest, water and local produce closely connected.
