La Capitale brings French brasserie cooking to Four Seasons Hotel Amman, with a room designed by AvroKO and an all-season terrace incorporating a vertical herb garden. Traditional bistro references sit alongside contemporary details, and the bar builds its drinks around seasonal ingredients. The menu gives the French foundations clear expression: onion soup with Gruyère, escargots with garlic and herb butter, and bouillabaisse with saffron and rouille appear alongside beef and salmon tartares. A private chef's table offers a more structured experience, with five courses prepared interactively in the kitchen and French wines chosen to accompany them.
