La Mar Santiago celebrates Peru's cebichería tradition from an address on Nueva Costanera in Vitacura. Chef Carlos Labrín leads a kitchen focused on seafood and Peruvian cooking, with ceviches and dishes that reflect the meeting of Peruvian and Japanese influences. The menu includes a ceviche tasting, causes with crab or Nikkei-style salmon, and a sushi selection of sashimi, nigiri and maki. Sharing platters bring together seafood rice, ceviche and other preparations, making it possible to explore several styles across one meal. A separate wine list accompanies the food.
