Founded by Nicole Rubi in Nice, the restaurant’s Riviera influences carry into a setting open to resort guests, island visitors and those arriving by yacht. The menu includes escargots, truffle rigatoni and grilled entrecôte, accompanied by cocktails such as the Tomatini. A purpose-designed space beside the beach and live music shape the dining atmosphere. The residency runs through the winter season, offering a distinct restaurant experience alongside Hermitage Bay’s own dining programme.
