Landhaus Bacher is a family restaurant in Mautern, where Thomas Dorfer's cooking continues a tradition shaped by Lisl Wagner-Bacher. Classical sauces remain an important part of the kitchen's language, from beurre blanc to sauce de civet, brought into contemporary dishes with careful attention to their foundations. Susanne Dorfer-Bacher manages the restaurant and selects wines to accompany her husband's cooking. Her knowledge of the Wachau is joined by an interest in producers from Burgundy, Bordeaux, Germany and Italy, giving the cellar both a local centre and an international reach.
