Las Pérgolas serves Caribbean-Mediterranean fusion cooking at Las Verandas Hotel & Villas in Roatán’s French Harbour area. Chef Luis Tinoco builds the menu around local ingredients and recipes, giving regional food a place within the restaurant’s wider culinary influences. Hand-crafted cocktails accompany the food, while chef-led experiences, brunches and private dining provide different ways to use the restaurant. It also hosts special events. Las Pérgolas is distinct from the property’s casual Palapa Pool Bar, providing the more focused restaurant setting within a hotel whose accommodation includes rooms, suites and villas.
