Le Clarence
France

Le Clarence brings a distinctly personal version of French gastronomy to an intimate Parisian mansion. Executive chef Andrea Capasso, who rose through the restaurant’s kitchen, builds the meal around seasonal ingredients and a recurring dialogue between produce from land and sea. Menus unfold in three, four or six sequences, depending on the occasion, with individual ingredients explored through contrasting preparations and textures. The dishes change with the kitchen’s inspiration, making the progression part of the experience. Attentive service and a cellar spanning France’s wine regions extend the sense of a carefully hosted meal, while the historic surroundings give contemporary cooking a richly atmospheric frame.
