Les Palétuviers sits beside the river at Toubacouta in Senegal's Sine Saloum Delta. Lodges and bungalows are scattered through gardens of baobabs and bougainvillea, with accommodation looking towards the gardens or delta. Connected family bungalows provide separate sleeping spaces, while the Baobab Tree Suite is built into one of the estate's mature trees. The hotel's relationship with Toubacouta extends to its staffing and food supply. Most staff come from the village and surrounding area, and the kitchen buys from local farmers, fishermen and mango growers. Regional fish, shellfish and fruit shape meals, linking the restaurant to the waterways and agricultural landscape around the hotel.
