Campo is the restaurant at Los Poblanos Historic Inn & Organic Farm in Los Ranchos de Albuquerque. Its Rio Grande Valley cooking follows the daily harvest, combining organic ingredients from the estate with supplies from local farmers and herdsmen. The kitchen gives foods indigenous to New Mexico a central role. Brunch and dinner provide different ways to experience the seasonal menu, while a multi-course Chef's Table offers a more directed meal. Bar Campo carries the farm's produce into drinks, using fresh organic ingredients, lavender syrup, house-made bitters and amari alongside small-batch barrel-aged spirits.
