Lysverket

Lysverket occupies the former Bergen Lysverker building, now part of the KODE art museum. Chef and owner Christopher Haatuft serves a ten-course tasting menu that gives particular attention to Norwegian ingredients, from diver-caught scallops to dry-aged meat and seasonal vegetables. The restaurant's name preserves a connection with the building's former role in the city's electricity supply. Produce also comes from MatTak, an urban rooftop growing project developed by Haatuft with gardener Sigurd Boasson. The wine programme gives notable space to Jura and Burgundy, with sustainable producers represented in the cellar. Pairings bring the wine selection into the progression of the menu, connecting the restaurant's precise cooking with a broad cellar.
