Mashpi Lodge Restaurant
Ecuador

Mashpi Lodge’s two-storey dining room explores the ingredients of Ecuador’s coast, Andes and forests. The kitchen combines contemporary techniques with culinary research, using plants such as wild garlic and chillangua to connect the food with the lodge’s surroundings. Breakfast includes regional fruit, breads, cheeses, eggs, home-made jams and organic honey. Lunch takes a lighter form through vegetables, soups, sandwiches and Ecuadorian-international preparations, with ceviche among the possibilities. Dinner provides a more formal sequence within the tall dining room. The bar’s cocktails are designed around the forest, and an international wine selection accompanies the food.
