Inside a former textile mill in Mumbai, Masque builds a ten-course tasting menu around Indian produce. Founded by Aditi Dugar and led in the kitchen by Varun Totlani, the restaurant sources ingredients through farmers, producers and foraging trips, allowing the seasons to determine the progression of each meal. Traditional recipes and techniques are reconsidered through a modern Indian approach, with influences from elsewhere used to explore the ingredients more widely. The Masque Lab, opened in 2020, supports that work as a research and development kitchen. Wine, cocktail and non-alcoholic pairings accompany the tasting menu, and dietary requirements can be discussed when booking.
