Matsuhisa Aspen
Colorado

Matsuhisa Aspen brings Nobu Matsuhisa’s Japanese cooking and South American influences to a Victorian house on Main Street. Opened in 1998, it was the first Matsuhisa restaurant beyond the original Beverly Hills address. The main dining room downstairs features a walnut cocktail bar, bamboo-covered ceilings and a long sushi counter. Upstairs offers a more casual setting, with seasonal outdoor tables and a smaller sushi bar. Yellowtail sashimi with jalapeño, black cod with miso and white-fish tiradito are among the signatures. Diners can build a meal from shared dishes or choose the downstairs omakase, an eight-course sequence combining familiar preparations with seasonal ideas. Wine pairings and cocktails broaden the possibilities beyond sake.
