Mayta
Peru

Mayta is Jaime Pesaque's contemporary Peruvian restaurant and pisco bar on Avenida La Mar in Miraflores. Founded in 2008, it takes its name from the Aymara phrase for 'noble land'. The kitchen focuses on native products and their origins, using modern techniques to develop flavours rooted in memory and regional cooking. Its Bitácora Amazónica tasting menu emerges from Yachay, the restaurant's research and creative space. Across ten courses, it concentrates on Amazonian ingredients and the work required to understand them in their own territory. Wine pairings offer different selections of vineyards and vintages, while an alcohol-free pairing provides another way to follow the sequence.
