Memories is Sven Wassmer's restaurant at Grand Hotel Quellenhof in Bad Ragaz. Its cooking looks to the Alps, drawing on seasonal ingredients from the region and presenting them with a focus on their original flavours. Wood, stone and clear architectural lines continue that regional connection in the dining room, where an open kitchen makes the preparation part of the experience. The meal unfolds as a surprise tasting menu of up to ten courses. Rather than choosing individual dishes, guests follow the kitchen's selection and the produce available at the time. Vegetarian and gluten-free versions can be arranged in advance, allowing the same menu-led approach to accommodate different dietary needs.
